Chef Bryan McCarthy’s food philosophy is simple: local, fresh and staying true to each ingredient’s essence. Expect the likes of Dublin Bay prawn dumplings, rare breed pork belly and Macroom lamb with preserved damsons. If you’re feeling hungry, the 10 course degustation menu is a must.
